Chili

A recipe for chili handed down from Nancy's dad.

Ingredients

2 tablespoon Vegetable oil
1 cup Onion chopped
1/2 cup Red bell pepper diced
1/2 cup Green pepper diced
2 cups Celery diced
2 pound Ground beef
1 can (28 oz) Tomato undrained
3 tablespoon Worcestershire sauce
2 teaspoon Salt
2 teaspoon Chili powder
2 teaspoon Paprika
1 can (20 oz) Kidney beans undrained
1 can (20 oz) Chickpeas drained
2 tablespoon Lemon Juice
1/4 cup Fresh parsley chopped


 
 
Instructions
Heat oil in large sauce pan or dutch oven over medium heat. Add onion, celery, and peppers and cook until tender. Remove vegetables from pan with a slotted spoon.

Add ground beef and brown over medium heat. Return vegetables to pan. Stir in tomatoes, worcestershire sauce, salt, chili powder and paprika. Bring mixture to boil. Reduce heat to simmer (moderately low temperature) chili uncovered for 1 hour.

Add kidney beans and chickpeas. Cover and simmer chili 30 minutes longer. Stir in lemon juice and parsley.
